Watermelon Pico Recipe

I first had watermelon pico on top of nachos in Charleston, SC. I was a little skeptical when looking over the menu but once I tried it I was hooked. I knew I had to recreate it when I got home.

Though I like regular pico de gallo, I've never really been much of a tomato fan so I actually prefer this to traditional pico. The watermelon provides a similar texture to tomatoes and the sweetness doesn't overpower the salsa.

This recipe, like traditional pico, calls for cilantro which I love. But apparently cilantro tastes like soap to some people, so if you're one of those people, mint leaves would be a good substitute!

Watermelon Pico
Enjoy with chips or on top of chicken or fish.
  • 3 cups diced seedless watermelon
  • 1/3 cup chopped cilantro
  • 1 lime juiced
  • 1 medium white onion (chopped)
  • 1-2 jalapenos (chopped)
  • salt to taste
In a large bowl, stir to combine watermelon, cilantro, onion, and jalapeno. Stir in lime juice and salt to taste. Enjoy!
